Everything and the Leftovers Breakfast Sandwich

The morning after Thanksgiving means plenty of leftovers! Get creative and empty out your fridge with this easy and savory Leftovers Breakfast Sandwich!


Makes one sandwich


Ingredients:

• 2 Everything Sandwich Rounds

• 1 slice cheddar cheese

• 2 oz leftover turkey

• ¼ cup low carb stuffing

• 2 tbsp cranberry sauce (if you’re cutting carbs, use a no sugar added sauce)

• 1 egg

• ½ tbsp butter


Preparation:

1. Heat a skillet on medium heat. Warm up the Everything Sandwich Rounds for 2 minutes on each side

2. Top one Sandwich Round with cheddar cheese, stuffing, turkey, cranberry sauce, and the remaining Sandwich Round. Cook for 2-3 minutes on each side, or until cheese is melted and the sandwich is warmed through. Set aside. Plan to remove the second Sandwich Round right before placing the egg on top.

3. Add a pat of butter to the hot skillet and allow it to melt. Crack an egg over the pan and season with pepper and flaky salt. Wait for the edges to set, then flip over. 4. Once the yolk has reached your desired level of doneness, remove from the skillet and place the egg on top of the open sandwich. Put the remaining Sandwich Round back, and enjoy!
