PB&J French Toast Stack

We turned your favorite childhood sandwich into a high protein French toast dream. This recipe uses OA Gourmet’s keto-friendly Sandwich Slices and adds an extra protein boost with Greek yogurt in the batter. This stack has 39g protein - 4x more than regular French toast!
Ingredients:

4 OA Gourmet Sandwich Slices

2–3 tbsp natural peanut butter

2–3 tbsp keto-friendly jelly or mashed berries

Butter for frying and topping

Sugar-free maple syrup, for serving

Fresh berries, for garnish
For the French toast batter:

1 egg
-
Splash of orange juice
-
1/4 cup plain Greek yogurt
-
Splash of milk (or milk alternative)

1/2 tsp vanilla extract

Dash of cinnamon
Instructions:

In a shallow bowl, whisk together the egg, orange juice, Greek yogurt, milk, vanilla, and cinnamon until smooth and creamy.

Spread peanut butter on two Sandwich Slices and jelly on the other two. Close them up to make two sandwiches.

Dip one sandwich into the batter, coating both sides well. Heat a small pat of butter in a nonstick skillet over medium heat and pan-fry the sandwich until golden brown on both sides—about 2–3 minutes per side.

Transfer the cooked sandwich to a plate to cool slightly while you repeat the process with the second one.

Take the first sandwich and carefully spread a bit more peanut butter and jelly on top. Place the second sandwich on top to create a decadent French toast stack.

Top your stack with a dab of butter and a drizzle of maple syrup. Add fresh berries on the side (or right on top) for a bright, juicy finish.
