Keto Huevos Rancheros made with OAG Sandwich Thins

Easy to make Keto breakfast - a meal prep essential

We love this recipe because it's easy to make and gets better everyday as the flavors soak into our amazing sandwich thins, if you practice a Keto diet this dish is for you!
Loaded with healthy fats and low carb thanks to our cauliflower sandwich thins, the ketones you're looking to produce for fat burning ketosis will start early in the day and keep you fueled throughout.

Ingredients:

  • 1 and a half cups finely shredded cheddar jack cheese
  • 1 pack Outer Aisle Gourmet Sandwich Thins (6 slices)
  • 1 pound cooked chorizo sausage, chopped coarsely 
  • 1 can of diced green chiles
  • 8 eggs
  • 1/2 cup milk
  • 1/2 teaspoon of dried oregano
  • 1/8 teaspoon crushed red pepper

Instructions:

Step 1:

Spray 10 inch baking dish with non stick cooking spray

Step 2:

Cover bottom of pan with Outer Aisle Gourmet Sandwich Thins, overlapping as necessary. Cut the remaining sandwich thins into strips and save for next step.

Step 3:

Sprinkle 1 cup of cheddar jack cheese over OAG sandwich thins, arrange remaining sliced sandwich thins over layer of cheese, add cooked chorizo, and green chiles.

Step 4:

In a medium bowl, combine milk, eggs, oregano, red pepper, and a pinch of salt and pepper. Whisk thoroughly, pour over mixture in baking pan. Sprinkle with remaining cheese, cover with tin foil & refrigerate for 8 hours or overnight.

Step 5:

Pre heat oven to 350 degrees, bake covered for 35 minutes.

Step 6:

Uncover, bake an additional 15-20 minutes or until knife inserted in center comes out clean. 

Remove from oven, let rest for 5 minutes. Serve with your favorite green or red salsa.
