6 Egg-cellent Low Carb Egg Sandwich Recipes
What better way to start the day than with one of these protein & veggie packed egg sandwich recipes? They’re easy to make, light on carbs and delicious with any of our Sandwich Thins for different flavor combinations!
Each single serve recipe is perfect for a busy weekday breakfast but can be easily adjusted for more people — just multiply the ingredients by how many servings you’ll want.
1. Fried Egg & Bacon
Ingredients
• 1 Original Sandwich Thin, toasted
• 2 pieces of crispy bacon
• 1 fried egg
• Salt & pepper (optional)
Preparation
1. Assemble in this order: Original Sandwich Thin, bacon, fried egg, and if you’re using any, salt & pepper
2. Scrambled Egg & Cheese
Ingredients
• 1 Everything Sandwich Thin, toasted
• 1 scrambled egg
• 1 tbsp shredded cheddar
• ½ tsp chopped chives
Preparation
1. Assemble in this order: Everything Sandwich Thin, scrambled egg, shredded cheddar, chives
3. BLT
Ingredients
• 1 Broccoli Sandwich Thin, toasted
• 1 fried egg
• 1 piece of cooked bacon
• 2 pieces of green leaf lettuce
• 1 slice of tomato
Preparation
1. Assemble in this order: Broccoli Sandwich Thin, lettuce, tomato, bacon, fried egg
4. Avocado Egg Salad
Ingredients
• 1 Broccoli Sandwich Thin, toasted
• 1 boiled egg
• ½ avocado
• 1 tbsp chopped red onion
• 1 tbsp greek yogurt or mayonnaise
• Pinch of salt, pepper, chopped chives, red pepper flakes
• Squeeze of lemon juice (optional)
Preparation
1. Combine the boiled egg, avocado, red onion, greek yogurt or mayonnaise, & herbs and spices in a bowl. Mix well to combine.
2. Assemble in this order: Broccoli Sandwich Thin, egg salad mixture, and top with any herbs you’d like or a squeeze of lemon juice
5. Avocado Toast
Ingredients
• 1 Everything Sandwich Thin, toasted
• ½ avocado, mashed
• 1 sunny side up egg
• Salt, pepper, & everything bagel seasoning
Preparation
1. Assemble in this order: Everything Sandwich Thin, mashed avocado, sunny side up egg, and salt, pepper, & everything bagel seasoning
6. Tomato Basil
Ingredients
• 1 Italian Sandwich Thin or Original Sandwich Thin, toasted
• 1 scrambled egg
• 4 cherry tomatoes, fresh or charred
• 3 fresh basil leaves
Preparation
1. To make charred cherry tomatoes, heat olive oil on medium high heat. Add cherry tomatoes and cook until the outsides are charred and about to burst
2. Assemble in this order: Sandwich Thin of your choice, scrambled egg, cherry tomatoes, fresh basil leaves
