Spinach & Swiss Quiche Made with Outer Aisle Pizza Crusts

One of the hardest parts of managing a ketogenic, low-glycemic, or low-carb diet is preparing meals that are both satisfying and diet appropriate.
While obvious foods like pizza or sandwiches stand out from the crowd, something as simple and delicious as a quiche can also be off-limits. It would be a shame to have to miss out on such an easy-to-make breakfast because it requires a crust.

Ingredients:
- 2 Outer Aisle Cauliflower Pizza Crusts (Jalapeño or Italian)
- 6 eggs
- 1 cup half and half
- 1 cup grated Swiss cheese
- 2 cups fresh spinach
- ½ tsp. salt
- ÂĽ tsp. Cayenne

Instructions:Â
Step 1:
-Preheat the oven to 350Âş
-Take one Cauliflower Pizza Crust and lay it flat on a quiche baking pan
-Cut the other Cauliflower Pizza Crust into four-inch strips, lining the edges of the pan
-Place in oven for 2-3 minutes

Step 2:
-Combine the eggs, half and half, Cayenne, and salt into a bowl and whisk thoroughly until the mixture has the same color throughout
-Grate the cheese
-Take the crust out of the oven (adjust the edge pieces as necessary to create an even border – careful, they will be hot)

Step 3:
-Spread the cheese evenly across the crust at the bottom of the pan
-Place the spinach on top of the cheese, layering evenly
-Pour the egg mix slowly into the pan (it should fill up most of the pan)

Step 4:
Place in oven at 350Âş for 50 minutes. Remove from oven once a knife can be inserted into the center and come out clean. Allow to cool, then cut and serve.
